Fumaric acid, a carboxylic acid derived from butene, is a colorless and flammable crystal.
It is the simplest unsaturated dicarboxylic acid. Also known as fumaric acid or fumaric acid.
It was first found in Corydalis yanhusuo. In addition, it also exists in a variety of mushrooms
and fresh beef. Fumaric acid and maleic acid are geometric isomers of each other. Fumaric
acid is transformed into maleic acid when heated to 250-300 ºC. Fumaric acid can also
produce monobasic and binary esters or amides, but it can not produce monobasic acyl
chloride. It reacts with phosphorus pentachloride or thionyl chloride to form binary acyl chloride.
Trans maleic acid is oxidized by potassium permanganate to form racemic tartaric acid.
Fumaric acid uses
Fumaric acid, as a food sour agent, plays an important role in bacteriostasis and anti-corrosion.
It is used as acidity regulator, acidifier, anti thermal oxidation assistant, curing accelerator and
spice. Fumaric acid is an intermediate of fine chemicals such as medicine and optical bleach.
In the pharmaceutical industry, it is used for the production of antidote sodium dimercaptobutyrate
and blood rich iron for the treatment of small red blood cell anemia. Fumaric acid is also used to
produce unsaturated polyester resin and is also the main raw material for the production of
L-aspartic acid.
